Spicy and garlicky stir-fried vegetables with vega minced meat

It's now so easy to eat more vegetarian food because you can now recreate meat dishes using vega-meat.

This dish uses vega minced meat, and is spiced up with garlic and chili. For this recipe, I used leeks, carrots and bell pepper but you can use any vegetable you like. It's very easy to prepare and also very satisfying.

Preparation time: 20 minutes

Ingredients

175 grams vega minced meat
4 cloves garlic (finely chopped)
2 medium-sized leeks (around 500 grams, washed and sliced)
1 pc carrot (finely chopped)
1 red bell pepper/paprika
freshly grounded black pepper
1 dried chili (make it two chili's if you want it spicier)
3 tbsp soy sauce
5 tbsp vegetable oil
salt to taste

Preparation

1. Heat 3 tbsp of vegetable oil, and stir-fry the garlic and chili for around 30 seconds. Add the vega minced meat, season with black pepper and stir-fry until browned (around 5 minutes). Add 3 tbsp of soy sauce and mix well. Remove from heat and set aside.

2. In  another pan, heat 2 tbsp of vegetable oil. Stir-fry the leeks until transparent, and then add the carrots. Once the carrots are almost cooked, add the vega minced meat and the red bell pepper. Taste and season with salt as needed.

Serve warm with white rice.

Extra: How to clean and slice leeks. Cut the leeks in half but leave a small part of the bottom uncut (so the leek is still in one piece but you can wash the insides). Wash thoroughly under running water to remove any dirt. Remove the darkest, tough green part. Then slice into half rings.
