Quinoa salad with halloumi
This quinoa salad is very tasty and easy to prepare. The roasted peppers and fried halloumi give it a lovely flavour. Warning though, this dish will make you eat a lot because of it's just so good. 😊

Note: Halloumi is a semi-hard salty cheese. In the Netherlands, this is available in Turkish stores and in some supermarkets.

Serves: 2 people.

Ingredients

275 grams quinoa (we used 3-colored quinoa)
1 to 2 large roasted pepper (sold in jars in supermarkets)
1 small red onion (sliced)
250 grams halloumi cheese (cut into 6 pieces)
500 ml vegetable broth
zest and juice of 1 lemon
a pinch of sugar
a pinch of salt
1 tbsp Olive oil (for the quinoa)
2 tbsp vegetable oil (for frying the halloumi)
Fresh coriander or parsley leaves (optional) 


Preparation

1. Heat 1 tbsp olive oil, and cook the onion and pepper for around 3 minutes.
2. Add the quinoa and cook for another 3 minutes.
3. Add the broth, cover and let it simmer for 15 minutes or until soft.
4. While the quinoa is simmering, fry the halloumi until all sides are golden brown. Set aside.
5. Mix the lemon zest, juice, salt and sugar.
6. Serve the salad with the halloumi and the lemon dressing. Top with fresh coriander leaves.
