Filipino seaweed (guso) salad


I miss fresh seaweed. Eating it is refreshing and reminds me of the sea. So if you have access to fresh seaweed, try this simple salad recipe. This recipe uses Guso (Euchema cottoni) which is popular in Southern Philippines.

Serves: 4 - 6 people as side dish
Preparation time: 10 minutes

Ingredients

2 cups fresh seaweed
1 inch ginger (finely sliced)
1 small red onion (finely chopped)
1 small tomato (deseeded and cut into squares)
2 tbsp calamansi juice or lime juice
salt to taste

Preparation

Blanch the seaweed. Then mix the sliced ginger, red onion and tomato. Season with calamansi juice and salt.
