Basic Dutch Pancake

Dutch pancakes (pannenkoek) are less fluffy than American pancakes, and are great with both sweet and savoury toppings (think of pancake with cheese or vegetables!) It's also very easy and quick to make. All you need is flour, eggs, milk and salt; and you're ready for a pancake feast!

Makes  7 pancakes.

Ingredients

2 cups flour
2 cups milk
2 medium-sized egggs
2 pinches of salt
a pinch or two of cinnamon powder (optional)
Butter for frying


Preparation

1. Beat the eggs and milk together. Mix in the flour, salt and cinnamon until batter is smooth (no lumps). 
2. Heat a flat pan. Melt 1/2 tsp butter, and pour 1/2 cup of the batter at the center of the pan. It will naturally form into a circle, or you can also lift and turn the pan to distribute the batter and make it thinner. 
3. Bake the pancake until one side is golden brown (around 1 to 2 minutes, once the edges are golden brown). Then turn the pancake over, and cook until the other side is golden brown. Tip: make sure the pan and oil are hot enough so that you get a golden brown colour.
4. Serve while it's hot with your favourite topping.
